The secret to making soft ragi roti is to boil water in a pan, according to Chef Sanjeev Kapoor. Add salt and ghee after it begins to boil, stir well, and let it simmer for five minutes. After that, create rotis out of that dough for a soft result. This step is often skipped by people, who then whine that their rotis aren't soft.

Swap wheat flour for ragi flour to make rotis and parathas

Ingredients:

  • 1 cup of finger millet flour (ragi/nachni) and additional for dusting
  • To sample salt
  • 1 tablespoon of oil, plus as necessary

Technique:

1. Bring 2 cups of water to a boil in a non-stick skillet over medium heat. Add salt and oil.

2. Lower the temperature, mix in the millet flour, and thoroughly combine. To allow the mixture to cool to room temperature, turn off the heat, stir, cover, and set aside for 10–15 minutes.

3. Put the millet flour dough on the oiled worktop and knead it thoroughly. Divide the dough into equal pieces and form them into pedas.

4. Make rotis by rolling out the pedas with a little flour.

5. Use a nonstick tawa. Put the rotis on it one at a time, roasting each side for 2-3 minutes. Put the rotis over the open flame and let them puff up.

6. Put them on a serving dish and serve them warm.

What advantages does ragi offer for diabetics?

Because of their low glycemic index and high fiber content, millets like jowar (sorghum), Finger Millet (Ragi), and bajra (pearl millet) are thought to be beneficial for people with diabetes, according to Riya Desai, the senior dietitian at Wockhardt Hospitals in Mumbai, in an interview with HT Lifestyle on August 1, 2024.
